ONE PAN CHICKEN STIR FRY
Ingredients
500g of Chicken Thighs - Cubed (can use any chicken you like)
1 Red Capsicum - finely sliced (See Note)
Handful of Green Beans, trimmed - sliced (See Note)
2 x 350g packs of Hokkien noodles
Toasted Sesame Seeds, if you like on top
Sauce
3 Tbs Oyster Sauce
2 Tbs H&H Sweet Chilli Sauce (Hot, Med or Mild - to your taste)
5 Tbs Soy Sauce
Recipe
Cook the Chicken in a little Olive Oil and a touch of Sesame Oil (1/4 tsp if that). Once cooked remove from pan and set aside.
While chicken is cooking, prepare the noodles as per the packet instructions and set aside
Cook the Capsicum and Beans in the same pan with a little more olive oil, until soft.
Once vegetables are done, add the cooked noodles to the pan, add the sauces and toss to coat the noodles.
Sprinkle with toasted sesame seeds and serve warm.
NOTE - this recipe can be modified to include any vegetable you like in a stir fry. You can add Mushrooms, Asparagus, Snow Peas, Broccolini, whatever you have on hand.
